The Story

Drawn butter is just clarified butter — the milk solids settle out and you're left with pure, golden, liquid flavor.

Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 1 clove garlic, smashed
  • 1 strip lemon zest
  • 1 sprig fresh thyme
  • Pinch of flaky sea salt

Instructions

Melt butter slowly over low heat. Don't stir — let it separate naturally.

Skim off the white foam that rises to the top.

Carefully pour the clear golden butter into a warm serving bowl, leaving the milky solids behind.

Add the garlic, lemon zest, and thyme. Let steep 2 minutes, then remove.

Finish with a pinch of flaky salt. Serve warm.
